Sydney Bars: PS40 Soda Bar & Cocktail Bar
I recently attended an event PS40 for Dry July to showcase Australian Bitters and some fabulous Mocktails created by Michael Chiem. It's the first time I have visited this bar and certainly won't be my last. The event was obviously alcohol free, but to be honest, if I wasn't told there wasn't any hard stuff in those cocktails I probably wouldn't have even noticed. They rocked! So did the food I might add. Note: The cocktails above are not from the event, they are the real McCoy.
PS40 is a unique cocktail bar concept from three forward- thinking Sydneysiders that combine retail and hospitality in a unique way. Owners Michael Chiem and Livia Lima have something a little different than a lot of other bars with their range of hand crafted PS Sodas. PS40 is in good hands, with Thor Bergquist the former General Manager of Experimental Cocktail Club (ECC) in London and New York, and has worked at Der Raum in Melbourne and Tippling Club in Singapore. Michael Chiem is the former bar manager of Sokyo and Black at the Star as well as Bulletin Place.
I love the decor of the bar, it's a funky warehouse feel, with an open kitchen and the bar opposite.
PS soda's soft drinks are fresh with exciting flavours which flows on to the cocktails created by the team.The thoughtful wine list has been put together by Lo-Fi wines and will sit alongside local beer producers Wayward and Young Henry’s.
